Preheat your oven to 375°F. Arrange the baguette slices on a baking sheet and brush lightly with olive oil. Bake for 5–7 minutes until golden and crisp. Set aside.
Sear the Beef Tips or Steak
Heat olive oil in a large skillet over medium-high heat. Add the beef tips or steak in a single layer and cook for 3–6 minutes, allowing them to develop a rich brown crust. Remove from heat and set aside and allow to rest for 5 minutes. After steak has rested slice very thinly and set aside.
Create the Sauce
Add butter to medium heat skillet. Add the shallot and mushrooms and cook for 5-7 minutes stirring frequently. Add garlic and cook for additional 30 seconds or until garlic becomes fragrant. Turn heat on pan down to low. Stir in milk, heavy cream and gorgonzola cheese. Allow the mixture to simmer for 2–3 minutes until the gorgonzola cheese has melted and the sauce has slightly thickened and turned glossy. Remove from heat and add the sliced beef tips or steak back to the pan and stir well to incorporate.
Season
Add salt and pepper to taste.
Assemble the Crostini
Spoon the warm beef mixture onto each toasted baguette slice.
Sprinkle the tops with parmesan cheese and place back in oven for one minute or until cheese has melted.
Garnish and Serve
Sprinkle with fresh parsley and serve immediately.
