Loaded BBQ Chicken Potato Skillet

Ingredients
  

  • pounds boneless skinless chicken thighs, cut into bite-sized pieces
  • 4 –5 potatoes peeled and thinly sliced
  • 1 medium onion sliced into half-moons
  • 1 poblano pepper diced
  • Kernels from 2 ears of corn
  • 1 cup BBQ sauce plus more for drizzling
  • ½ cup cooked and crumbled bacon
  • cups shredded sharp cheddar cheese
  • 6 –8 tablespoons olive oil divided
  • Ranch dressing for drizzling
  • Chopped fresh parsley for garnish
  • For the chicken:
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • ½ teaspoon smoked hickory salt or regular salt
  • For the potato mixture:
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Method
 

  1. Heat 3–4 tablespoons of olive oil in a large cast-iron skillet over medium-high heat. Add the chicken, sprinkle it with the seasonings, and stir until every piece is coated. Cook for approximately 3 minutes, or until almost cooked through.
  2. Add the BBQ sauce, stir to coat the chicken, and cook for another 2 minutes. Transfer the chicken to a bowl and set it aside.
  3. Add another 3–4 tablespoons of olive oil to the skillet, followed by the potatoes, onion, poblano pepper, and corn. Reduce the heat to medium or medium-low and cook for 15–20 minutes, stirring frequently, until the potatoes are tender with beautifully crisp edges.
  4. Season with salt and pepper, then stir in the crumbled bacon. Sprinkle the cheddar cheese over the skillet, cover, and allow the cheese to melt. Add the BBQ chicken back to the skillet and finish with ranch dressing, BBQ sauce, and chopped parsley.
