The Secret to Really Delicious Cheeseburger Soup

What makes this soup so special is the way all those wonderful flavors build on one another.

We start by cooking bacon until it’s beautifully browned and crispy. Then we brown the ground beef and season it with a flavorful burger seasoning blend.

Next come the onions, celery, and garlic, sautéed in butter until they’re tender and fragrant.

A little flour helps thicken the soup, while chicken broth and diced potatoes create a hearty base.

And then comes my favorite part…

THE CHEESE!

Once the potatoes are tender, we stir in heavy cream, sour cream, and plenty of sharp cheddar cheese until everything becomes wonderfully rich, creamy, and irresistible.

Top it off with crispy bacon and a sprinkle of fresh parsley or green onions, and you’ve got yourself one seriously delicious bowl of comfort food!

Tips for Making the Best Bacon Cheeseburger Soup

Use freshly shredded cheddar cheese. Freshly grated cheese generally melts more smoothly than packaged shredded cheese, giving your soup a lovely creamy consistency.

Don’t rush the bacon. Cooking it until crisp gives you a delicious crunchy topping and plenty of smoky flavor.

Cut your potatoes into evenly sized pieces. This helps them cook at the same rate so every spoonful has perfectly tender potatoes.

Add the cheese off the heat. Once the potatoes are tender, remove the pot from the heat before adding the dairy and cheese. This helps keep the soup smooth and creamy.

Season to taste. Burger seasoning adds plenty of flavor, but a little extra salt and freshly cracked black pepper can really bring everything together.

You could also serve this soup with warm dinner rolls, a crusty baguette, or a simple green salad.

Storing and Reheating Leftovers

Have leftovers? Lucky you!

Allow the soup to cool slightly, then transfer it to an airtight container and refrigerate promptly. It should keep well in the refrigerator for up to 3–4 days.

When you’re ready for another bowl, gently reheat it on the stovetop over low to medium-low heat, stirring occasionally.

Because this soup contains cream, sour cream, and cheese, avoid boiling it during reheating. If it has thickened in the refrigerator, simply stir in a splash of chicken broth or milk until you reach your desired consistency.

I don’t generally recommend freezing creamy potato-based soups because the potatoes can become grainy and the dairy may separate when thawed.

Servings: 8
Course: Soup
Cuisine: American

Ingredients

  • 6 –8 slices bacon cooked and chopped into small pieces
  • 1 lb ground beef
  • 2 tsp burger seasoning I used Kinder’s Buttery Burger Blend
  • 1 small onion diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • ¼ cup butter
  • 6 tbsp all-purpose flour
  • 4 cups chicken broth
  • ½ cup heavy cream
  • ½ cup sour cream
  • 1 lb potatoes peeled and diced
  • 2 cups sharp cheddar cheese shredded
  • Salt and black pepper to taste
  • Chopped green onions or fresh parsley for garnish (optional)

Method

  1. Cook the Bacon
  2. In a large Dutch oven or soup pot over medium heat, cook the bacon until browned and crispy. Remove from the pot and set aside.
  3. Brown the Ground Beef
  4. Add the ground beef to the same pot and cook until browned, breaking it into small pieces as it cooks. Drain off excess grease and season with 2 teaspoons of burger seasoning. Stir well, then remove the beef from the pot and set aside.
  5. Sauté the Vegetables
  6. Add the butter, diced onion, and celery to the pot. Sauté for approximately 5 minutes, or until the vegetables begin to soften. Add the minced garlic and cook for an additional minute, stirring frequently.
  7. Make the Soup Base
  8. Sprinkle the flour over the sautéed vegetables. Stir well to coat everything evenly and cook for approximately 1 minute to eliminate the raw flour taste.
  9. Add the Chicken Broth
  10. Gradually pour in the chicken broth, stirring continuously to incorporate the flour and create a smooth soup base.
  11. Add the Beef, Bacon, and Potatoes
  12. Return the browned ground beef and half of the crispy bacon to the pot. Add the peeled and diced potatoes and stir well to combine.
  13. Simmer Until Tender
  14. Bring the soup to a gentle simmer and cook for approximately 15–20 minutes, or until the potatoes are completely tender, stirring occasionally.
  15. Make It Creamy and Cheesy
  16. Remove the pot from the heat. Stir in the sour cream, heavy cream, and shredded sharp cheddar cheese. Continue stirring until the cheese is completely melted and the soup is rich, creamy, and smooth.
  17. Season to Taste
  18. Taste the soup and add salt and freshly ground black pepper as needed. Stir well to combine.
  19. Garnish and Serve
  20. Ladle the hot soup into serving bowls and top with the remaining crispy bacon. Garnish with chopped green onions or fresh parsley, if desired. Serve warm and enjoy!

Notes

Tips for the Best Bacon Cheeseburger Soup
  • For the smoothest, creamiest texture, shred your own sharp cheddar cheese.
  • Remove the soup from the heat before adding the sour cream, heavy cream, and cheese to prevent the dairy from separating.
  • Cut potatoes into evenly sized pieces so they cook at the same rate.
  • If the soup becomes too thick, stir in a splash of additional chicken broth until it reaches your preferred consistency.
  • Serve with warm, crusty bread or my homemade Cheddar Jalapeño Dutch Oven Bread for an extra delicious meal!
