Ingredients
Method
- Cook the Bacon
- In a large Dutch oven or soup pot over medium heat, cook the bacon until browned and crispy. Remove from the pot and set aside.
- Brown the Ground Beef
- Add the ground beef to the same pot and cook until browned, breaking it into small pieces as it cooks. Drain off excess grease and season with 2 teaspoons of burger seasoning. Stir well, then remove the beef from the pot and set aside.
- Sauté the Vegetables
- Add the butter, diced onion, and celery to the pot. Sauté for approximately 5 minutes, or until the vegetables begin to soften. Add the minced garlic and cook for an additional minute, stirring frequently.
- Make the Soup Base
- Sprinkle the flour over the sautéed vegetables. Stir well to coat everything evenly and cook for approximately 1 minute to eliminate the raw flour taste.
- Add the Chicken Broth
- Gradually pour in the chicken broth, stirring continuously to incorporate the flour and create a smooth soup base.
- Add the Beef, Bacon, and Potatoes
- Return the browned ground beef and half of the crispy bacon to the pot. Add the peeled and diced potatoes and stir well to combine.
- Simmer Until Tender
- Bring the soup to a gentle simmer and cook for approximately 15–20 minutes, or until the potatoes are completely tender, stirring occasionally.
- Make It Creamy and Cheesy
- Remove the pot from the heat. Stir in the sour cream, heavy cream, and shredded sharp cheddar cheese. Continue stirring until the cheese is completely melted and the soup is rich, creamy, and smooth.
- Season to Taste
- Taste the soup and add salt and freshly ground black pepper as needed. Stir well to combine.
- Garnish and Serve
- Ladle the hot soup into serving bowls and top with the remaining crispy bacon. Garnish with chopped green onions or fresh parsley, if desired. Serve warm and enjoy!
Notes
Tips for the Best Bacon Cheeseburger Soup
- For the smoothest, creamiest texture, shred your own sharp cheddar cheese.
- Remove the soup from the heat before adding the sour cream, heavy cream, and cheese to prevent the dairy from separating.
- Cut potatoes into evenly sized pieces so they cook at the same rate.
- If the soup becomes too thick, stir in a splash of additional chicken broth until it reaches your preferred consistency.
- Serve with warm, crusty bread or my homemade Cheddar Jalapeño Dutch Oven Bread for an extra delicious meal!
